Yummy Recipes shared at our August RS Activity...

We had a nice turn out for our recent August Relief Society Activity- Meals Under $10 and Swap Table.  Everyone seemed to have a fun time chit-chatting and enjoying the tasty meals together...so much in fact, we completely forgot to take any photographs...argh!!

There were two recipes that seemed to be the hit of the night, so we wanted to make sure we shared them with you.

Recipe #1...shared by Sister Liljestrand- Green Pea Salad


It's super easy to make...all you do is combine the following ingredients:

10 oz. package of green peas (small) semi thawed
1.5 cups dry toasted peanuts
2 cups cut white grapes (may use red grapes)
1 package of broccoli slaw
Small bottle of poppy seed dressing

Mix all the above together and chill about 4 hours before serving.  You can also add a small bag of slivered almonds to the mix if you'd like.

Recipe #2...shared by Sister Wilson- Neiman Marcus Chocolate Chip Cookies 


Here are the ingredients you'll need:

2 c. butter
2 c. sugar
2 c. brown sugar
4 eggs
2 tsp. vanilla (I add maybe ½ tsp. coconut flavoring along with the vanilla)
4 c. flour
5 c. blended old fashion oats
2 tsp. soda
2 tsp. baking powder
1 tsp. salt
24 oz. chocolate chips
3 c. nuts
1-8 oz. Hershey Bar grated

Directions:
Measure oats and blend in a blender to a medium/fine powder. (I like medium but it is a personal preference).

Cream the butter and both sugars. Add eggs and vanilla/coconut flavoring. Mix together with flour, oatmeal, salt, baking powder and soda. Add chocolate chips, grated Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 7 to 10 minutes at 375 degrees. I like to undercook my cookies.

Watch the bottom of the cookie and just as it begins to turn brown I take them out. They do not look done but as they cool they are perfecto!!  Just experiment til you get the perfect way that your family likes their cookies.

Makes 112 cookies.
